I've tried all 3 of the boards you mentioned and my choice would be the Formula with the caveat that your water is deep enough for the blade fin.

you can go to the mistral website www.mistral.com and check out their old boards. Though I'm not too sure if they're only pics or info also.
Why not just buy one of those old school boards with foot straps and mast base connections for two sails and hence two people.
